Drink of the Week: The Mary Pickford

The Mary PickfordIt’s Oscar weekend and the modern day quasi-silent film, “The Artist” is looking to take many, if not most, of the little gold men. It’s therefore kind of hard think of a better selection than this delightfully subtle and sweet, if now obscure, classic named for the single most famous woman in the silent cinema. It’s true that few of Mary Pickford’s hits — the ones that haven’t been lost, anyway — are often watched today, even by many crazy cinephiles like me. Indeed, as far as I can figure out not even the wondrous and far more classic-cinema knowledgeable Self-Styled Siren, Farran Smith Nehme, nor the sharp witted and more free-roaming Marilyn Ferdinand have written much about her films.

Nevertheless, Pickford’s legacy looms large in Hollywood even nearly 120 years after birth. She was, if nothing else, one of the co-founders of United Artists along with Charlie Chaplin, director D.W. Griffith, regarded as the inventor of the movies as we know them, and her then husband, Douglas Fairbanks, the movies’ first true action superstar.

Less fortunately, Mary Pickford was also known to partake a bit too much. If you’re going to be gossiped about for your drinking, the least they can do is name a really good drink for you, and this one is really good.

A word of warning for the deeply insecure: Writer Wayne Curtis, who enjoyed today’s DOTW in the city where it remains most popular, Havana, Cuba, described it thus: “Another lost cocktail of Prohibition, which is pink and ladylike and served with a large wedge of pineapple.” Okay, so this is a rather delicate drink, and this a blog post for an online men’s magazine, but this is one beverage that proves the value of staying in touch with your feminine side. It’s extremely good.

The Mary Pickford

1 1/2 oz. white rum
1 oz. pineapple juice
1/4 tsp grenadine
1/4 tsp maraschino liqueur
1 piece pineapple (optional garnish)

Combine the rum, pineapple juice, grenadine and maraschino liqueur in a cocktail shaker. Shake like crazy and strain into a cocktail or wide-mouthed champagne glass. You can serve the pineapple on the side, or be crazy like me and drop a chunk into the actual drink. Be sure and toast America’s sweetheart when you take your first sip.

First of all, I’d like to give props to my friends representing Denizen Rum for suggesting this drink. It’s not just because they were nice enough to send me a free bottle and plenty of recipes that I say this drink worked probably especially well for me because of the Denizen I was using. (I was all out of the other stuff.) There’s nothing wrong with Brand X, but I really do think the somewhat zippier flavor of Denizen is adding a little extra something to my Mary Pickfords. (Though, after writing that, I feel as if I should be looking into a camera and holding up the bottle as I remind you that Denizen is available online for an extremely reasonable price here.)

Some quick words about the other ingredients. Whatever you do, don’t confuse maraschino liqueur with the maraschino syrup that drowns the unnaturally red cherries we all know. It’s an entirely different animal and a lot more interesting. I was using Luxor Maraschino. I’m not sure if there any other brands widely available.

Also, if you like a redder drink that looks more like the one in the picture, there’s an alternate recipe which is a bit sweeter but also very good attributed to the New York bar, PKNY, which boosts the ingredients up slightly to 2 ounces of rum, 1 1/2 ounces of pineapple juice, and a quarter ounce each of the maraschino and grenadine. (Naturally, they make their own grenadine and use freshly squeezed pineapple juice, though I didn’t and it was still good.) Drink of the Week: The Whiskey Smash

The Whiskey SmashThe Whiskey Smash is probably one of the clearest examples of a drink rescued from complete obscurity by the ongoing classic cocktail revival. Although the modern version featured in a growing number of retro-friendly bars differs enough from the recipe written up by cocktail pioneer Jerry Thomas in 1862 to be an entirely different cocktail, the more polished and slightly more elaborate version below is certainly a classic of sorts.

As it stands, the Whiskey Smash is a close relative of the Mojito and the (I swear upcoming) Mint Julep. It’s outstanding for a warm day or in a bar so crowded if feels like a warm day. Certainly if you’re a fan of whiskey, lemon, mint,  and heavy muddling, this is your drink.

The Whiskey Smash

2-3 ounces whiskey (bourbon, rye, Canadian, etc.)
1 quarter lemon, cut into four or more pieces
5 or more mint leaves
2-3 teaspoons superfine sugar
3 dashes of bitters
1/2-3/4 ounce water (optional)
1 mint sprig (semi-optional garnish)
1 maraschino cherry (very optional garnish)

Combine your whiskey, lemon pieces, superfine sugar, mint leaves and, if you like, splash of water in a cocktail shaker. (The water is really only there to approximate the 1/2 to 3/4 ounces of simple syrup most recipes call for instead of sugar, but I found the results about the same whether or not I included it.)

Muddle it all rather intensely, paying special attention to give a good mushing to the lemon pieces — this is a “smash” after all. You can take it a bit easier on the mint if you like. Make sure, however, that your sugar is dissolved in the liquid, which should happen without too much effort if you’re using superfine sugar and not cheating with ordinary table sugar.

Add lots of ice — cracked or crushed ice is probably better — and shake vigorously. Strain into a well chilled old fashioned glass with a few ice cubes in it. Because of all the lemon, mint, and crushed ice you may have to exercise a bit more patience at the straining stage, but your forebearance will shortly be rewarded. If you’d like an extra dash of sweetness and color, add a maraschino cherry along with the semi-obligatory mint-spring.

I found the results remarkably consistent regardless of which whiskey I used, though I found using Buffalo Trace bourbon resulted in a slightly more mellow and interesting smash than the super-reasonably priced Evan Williams I picked up for a ten spot. 100 proof whiskeys seem to work well here, and I had good luck using my standby Rittenhouse Rye as well as the hard to find 100 proof Canadian Club I’m lucky enough to have. I also found that this one drink that worked very nicely not only with traditional aromatic bitters like Angostura, but also with the bottle of Fee Brothers Celery Bitters I recently picked up. (Speaking of revived classics, as I understand it, celery bitters pretty much disappeared between sometime in the middle of prohibition and, believe it or not, 2008.)

I’ve also noticed there’s something of a fetish among bartenders not to end up with bits of mint in the final, strained drink. It happened to me a lot of the time, and it wasn’t a problem  either in terms of taste or aesthetics, in my view.

And just a reminder that you will really need a good, solid muddler suitable for lemon smashing as described so long ago in our guide to bar implements. If you don’t have one, you can improvise but you want something solid. A freshly washed hammer used with extreme caution, perhaps.

 

Drink of the Week: The Meyer-Canadian Semi-Sour

The Meyer-Canadian Semi-SourYou’ve never heard of the today’s Drink of the Week for a very good reason. The Meyer-Canadian Semi Sour, as I’ve named it (any other suggestions?) is the first DOTW that is pretty much entirely my own variation on a cocktail classic.  While I wouldn’t say this was a great invention that happened by accident, I did sort of stumble over it.

As I hinted at in my post on the whiskey sour some time ago, I find that particular cocktail staple to be extremely sour. Truth in advertising, I guess, but while many love it, for me it’s a drink for which I feel more respect than affection. Then, one day last week, I saw a small sack of Meyer Lemons on sale for a reasonable price at my local branch of the newish Southwestern grocery chain, Fresh and Easy. If you’re a foodie, you may know this seasonal citrus as an ingredient favored by such culinary legends as Alice Waters. I just like the idea of a lemon that’s partly an orange.

Searching around for cocktails made with the juice of the crossbreed fruit, I tried one drink which I may return to if I can find another bag. On a whim, I then decided to try out my own version of a whiskey sour, using the juice of this decidedly sweeter lemon which, unlike the fruit that Trini Lopez sang about, is entirely possible to eat. For some reason I decided to use slightly less juice than most recipes call for, slightly more sugar and about double the egg white.  Since I’d already had one drink, I decided to steer away from the hundred proof boozes I’ve been leaning toward and just go with good old 80 proof Canadian Club. The result was, for me, a small slice of near paradise.

The Meyer-Canadian Semi-Sour

2 ounces Canadian Club whisky
3/4 ounce (or slightly less) freshly squeezed Meyer lemon juice
1 to 1 1/2 teaspoons superfine sugar
1 large egg white
1 maraschino cherry (garnish)

Combine the ingredients in a cocktail shaker without ice. Shake vigorously to ensure that the egg white is fully emulsified — you should have a nice yellow froth going. Add ice and shake again, even more vigorously and longer. Pour into a chilled martini, wine, or rocks glass with a maraschino cherry for color and an added dash of sweetness. Try not to drink it all it once.

I also sampled the then unnamed Meyer-Canadian Semi-Sour with both 100 proof Canadian Club and Rittenhouse Rye, a personal favorite, but the stronger flavor of the 100 proof stuff overwhelmed it in both cases. 80 proof Canadian Club seems to be the perfect thing here, and I suspect this would work almost as well with one of CC’s competitors. I even more strongly suspect it would be outstanding with Crown Royal, if you’ve got that kind of money to throw around. It’s a shame I can’t try it with the 86 proof Canadian Club that my grandma used to drink back in the last century and which presumably was closer to whatever Don Draper was swigging decades prior, but the contemporary version works so nicely that I have a hard time complaining very much.

Of course, since this drink uses raw egg whites, the usual provisos apply that I covered in the whiskey sour post. There’s very, very, very little too worry about for most people though I know there’s tons of raw egg phobes out there. On the other hand, if you have a significantly compromised immune system or are pregnant or otherwise very touchy healthwise, you may want to either use pasteurized egg whites or simply avoid this drink. (Actually, if you’re pregnant, I’m not sure you’re even allowed to read this.)

Drink of the Week: Tom Johnstone

Tom Johnstone For whatever reason, today’s DOTW is not known as “the Tom Johnstone” but is simply “Tom Johnstone.” I could wonder why, but that’s like asking why Chrissie Hynde’s band is “Pretenders” and not “the Pretenders.”

David Wondrich theorizes that the drink is named for a man “who used to write shows for the Marx Brothers.” Since I’m a pretty big Marxian myself and had never heard of Johnstone, I was forced to do a little research and found that, like certain members of the legendary comedy team, Johnstone — apparently a fairly successful songwriter, cartoonist, and adman — was himself somewhat overshadowed by a better known older brother, Will B. Johnstone. If this drink really is his creation, at least Tom Johnstone gets the distinction of having created a somewhat rarish thing: a hard to foul-up Scotch-based cocktail which allows bartenders a few options, depending on taste and what they’ve got on hand.

Tom Johnstone

1 1/2 ounces Scotch
1/2 ounce fresh lime or lemon juice
1/2 ounce Cointreau or triple sec
1/2 ounce sweet vermouth

This one’s easy. Combine all the ingredients in a cocktail shaker with ice. Shake or, if you must, stir with cracked or crushed ice, and strain into a martini glass.

I think what I like most about the Tom Johnstone is that nothing seems to ruin it. My recipe offers substantially more freedom than the canonical Wondrich take. That’s because I found myself liking other versions I found online a bit more, though none of them are even remotely bad.

For starters, even though I often OD on tartness from lemon juice, here I actually prefer it to lime. Also, unlike some other drinks I’ve worked with, this one also works almost equally well with no-name triple sec as it does with Cointreau, the more tart top of the line orange liqueur. I also used some very good Scotch and some pretty cheap Scotch. Both worked dandy.

Tom Johnstone, be you the little known co-writer of “I’ll Say She Is” or some completely unknown bartender, hanger-on, wastrel, or dipsomaniac, I salute you for a very nice mixed beverage. And now, Chico Marx, he who is forever unfairly overshadowed by Groucho and Harpo but not Zeppo, performs a medley that includes the very bouncy “Moonlight Cocktail” starting at 1:50.

5 Questions with Sara Paxton of “The Innkeepers”

Sara Paxton is best known for roles in horror flicks like the 2009 remake of “Last House on the Left” and “Shark Night 3D,” as well as comedies such as the teen romance “Sydney White” with Amanda Bynes and “Aquamarine,” in which she starred as a mermaid. The critics have largely been kind, and the admitted fan of Goldie Hawn and distant cousin of star Bill Paxton, whom she has never met, has earned comparisons to Reese Witherspoon. Even so, it was her down to earth, low-key goofiness which drew the attention of writer-director Ti West for “The Innkeepers,” a surprisingly scary blend of classic ghost story horror and contemporary indie comedy. (It opens in select theaters nationwide this Friday after a month-plus run on VOD.)

It turns out that the 23-year-old Ms. Paxton was born to play the world’s cutest nerd/slacker-cum-asthmatic ghost hunter, and she does it extremely well. What attracted West was the very unglam, slightly geeky and goofy nature she exhibits in real life, which somehow seems to fit with the reality that she is, at 23, a highly experienced professional actress whose earliest gigs included contributing child voices to “SpongeBob SquarePants.” (She is also one of the child “singers” of the long-running Nickelodeon cartoon’s theme.)

And so we bring you five questions with every nerd’s dream girl: Sara Paxton.

1. There was apparently a bit of weirdness [probably not actually ghost related] happening around the set of “The Innkeepers” and the movie was somewhat inspired by creepy things that happened on Ti West’s prior film, “The House of the Devil.” What really scares you?

Sara Paxton: I’m a big baby. Ghosts scare me. If I go see a movie with killers who break into your house, that doesn’t scare me. In the moment, I am scared [because] of the suspense in the movie, but when I go home I don’t think about it. I’m not thinking, “That killer’s going to come in.” But after a ghost movie, I’m like [in a scary voice], “The ghosts are everywhere.” People think I’m ridiculous. I kinda am.

2. So you were perfectly cast for this movie! Now, you’ve done a few horror films. You’ve done some, like this and “Shark Night 3D,” that were more in the fun or even silly category. You’ve also done the kind of horror film where, if the audience isn’t actually traumatized when they walk out the door, they don’t feel like they’ve gotten their money’s worth. Would something like “The Innkeepers” actually scare you more than “Last House on the Left”?

SP: Yeah, “The Innkeepers” scared me. I watched it at South by Southwest [SXSW] in the huge theater with everyone else. That was the first time I saw it because Ti wouldn’t let me see anything, which I’m fine with. Yeah, it scared me. It scared me because it’s unlike any scary movie that I’ve ever seen. Normally, when I see a scary movie, even though it does scare me because I’m a big pansy, I know when it’s coming. I’m ready. I wasn’t ready for this, so it really scared me. I wasn’t prepared [even though I was there when it was shot]. The way he puts it together afterwards makes it scary.

3. Both of your parents work in dentistry. [Paxton’s mother is a dentist and her father manages the practice.] Can you talk about the importance of teeth in the performing arts?

SP: When I was a little kid, and I would do commercials and stuff, when I started losing my baby teeth, my mother would make me a little fake tooth. I wouldn’t get parts because of it, because casting directors would be mad. “We want real kids with [real teeth].” I never understood that. “I don’t wany to show my gap tooth.” Teeth are important, I guess you need good teeth, although sometimes they want the real deal — gritty characters with gnarly teeth.
