Well, remember the name Micheal Pollack, as this kid just might have a future. Check out the video above, where Pollack, a student in the crowd during a Q&A with Billy Joel, asks if he can accompany Joel on piano while Joel sings his favorite song – “New York State of Mind.” The result is pretty awesome.

Justified 4.09: The Hatchet Tour

SPOILER WARNING: This post will appear following a new episode of Justified. It is intended to be read after seeing the show’s latest installment as a source of recap and analysis. As such, all aspects of the series up to and including the episode discussed are fair game.

The season’s big mystery has officially been solved. The answer to the question of Drew Thompson’s identity has been answered: It’s Sheriff Shelby Parlow, hiding in plain sight this whole time. At first I was a little disappointed in this discovery. In part because I hoped all those hints last week were red herrings. It seemed silly to devote one episode to the audience figuring things out and another to having the characters do it. I felt like the writers were just serving up more delays to stretch out a storyline that really isn’t big enough to command a whole season, because it’s the best they could come up with. We know who Thompson is, all that’s left is to cuff him, and they’re going to drag out that out for four more episodes? I felt cheated.

Then, something occurred to me which put it all in perspective. This season wasn’t actually about figuring out who Drew Thompson was. Not really. As I’ve mentioned, one of the big themes has been Raylan’s preparing for fatherhood and Arlo’s influence on just what kind of Dad he’ll be. What I didn’t put together until this week, however, was how that was actually a smaller part of another, greater theme, perhaps the season’s most significant. And that’s how the history of Harlan, its people and their ancestors, impacts its future. The Arlo/Raylan/fatherhood idea is just a smaller piece of that greater puzzle.

The biggest sign pointing us in the direction of this idea was Raylan’s recollection of an old feud between the Givens and another Harlan clan. The way Raylan remembers it, Arlo got pinched for assault after he beat the crap out of a man named Johnson McClaren because his dog was shitting on their lawn. The thing escalated, the Givens are gearing up to go after the McClarens and calling on their allies, the Crowders, to go after the Sorensens, who were kin to the McClarens. That is, until Raylan’s mother Frances called a meeting for all the clans to get together and hash it out. Frances, who Raylan says had some French blood in her, once told her son that the term “hash it out” comes from the french word “hatchet,” like an axe, to “cut through the bullshit.”

Only, that old story didn’t really go down the way Raylan thinks it did, as Shelby points out. In truth, “the dog was incidental,” and Johnson McClaren had “verbally assaulted” his mother, making “implications around town as to her proclivities,” and pushed it too far. That’s when Arlo “saw fit to shove a pound of dog shit down his mouth.” But Frances “took the high road, called a truce, although she had every right to be affronted. Your daddy was protecting her honor.” Raylan looks at Shelby with a look of disbelief, saying “Arlo did that?” It goes against everything he believes his father to have been.

Product Review: Bluebeards Revenge Shavette

The Bluebeards Revenge

Going retro is cool and the straight razor is no different. Thanks to the most recent movie installment in the James Bond series, “Skyfall,” straight razors are popular again.

Online UK retailer The Shaving Shack saw a 123% increase in web traffic since the film was released in the UK. Traffic from Internet searches for “cut throat razor” and “straight razor” soared by a staggering 735% over the five days after the film was released.

What I really liked about this razor was the weight. Having never used a straight razor/shavette (the difference being with a shavette you can replace the blades), I had always seen them as being rather bulky and hard to control.

The other important factor was the way the weight was balanced from one end of the razor to the other. Initially, I had my reservations about the plastic handle, thinking it would affect the quality of my shave somehow, but it didn’t. The head of the blade was solid and just heavy enough to not have to apply too much pressure to my face when dragging the razor across my skin. It also wasn’t so large that it was hard to control, coming in at 24 cm fully open.

There really is no better feeling than a shave from a straight razor. When I was younger, my favorite part of getting a haircut was the straight razor across the bottom of my neck to eliminate any neck hairs, but the state where I live made them illegal due to health concerns. I would seriously sign a waiver to get that feeling after a cut these days. But what’s even better than that is buying my own and doing it myself.

That was another issue I faced: price. My assumption was that any straight razor would have to be expensive to be effective as most luxury razors retail for anything from $60 to $300. But at just $9.99, the Bluebeards Revenge Cutthroat Shavette/Straight Razor disproved my assumption. You could spend more, but why? You certainly don’t need to.

Another thing worth noting is that switching the blades was a snap… literally. It was easy to open the head of the razor and insert a new one. There really is no reason to not add a straight razor to your shaving repertoire.

Drink of the Week: The Shamrock Sour

the Shamrock Sour. Okay, we admit that St. Patrick’s Day is nearly a fortnight away, but the tireless promoters of the alcoholic industrial complex have been hard at work plying me with bottles of top-quality hooch and some intriguing holiday themed recipes to go with them. In this case, we’re talking about my personal favorite member of the Jim Beam Small batch family, Basil Hayden’s. Yes, it’s only 80 proof and therefore less overtly flavoriffic than a typical high quality bourbon, but it mixes so harmoniously, I really can’t say anything bad about it. It’s definitely one bourbon that’s worth trying with just a bit of cold water or maybe some ice cubes. Sort of like a sweeter version of a very nice Scotch.

Nor do I have anything but nice things to say about the Shamrock Sour, a lively variation on a timeless tonic developed by New York mixologist and proprietor, Julie Reiner, who appears to be something of a budding superstar in the bar game. I can’t think of a better final chapter to wrap up the quartet of delicious sours I’ve been featuring in recent weeks.

Now, I would agree with naysayers that the Irish/St. Patrick’s Day bonafides of any bourbon-based beverage are very seriously in doubt — it’s not like Kentucky is any kind of Irish-American enclave. On a more superficial level, the Shamrock Sour isn’t even particularly emerald colored, a bit of very expensive but worth it green chartreuse notwithstanding. Still, if the choice is between good taste and thematic consistency, I have to go with the taste. On the other hand, we’ll be trying out another drink using actual Irish whiskey as the big boozing day approaches. For now, however, I wholly endorse the Shamrock Sour for St. Patrick’s Day, or any other day. Authenticity, be darned.

The Shamrock Sour

2 ounces bourbon (preferably Basil Hayden’s®, naturally)
1/2 ounce green chartreuse
1/2 ounce fresh lemon juice
1/2 ounce grapefruit juice, preferably fresh
1/4 ounce agave nectar
1/4 ounce water (to mix with the agave nectar)
1/4 ounce egg white
1 lemon wheel (highly desirable garnish)
1 sprig of fresh mint (even more desirable garnish)

Combine bourbon, chartreuse — a highly distinctive a-little-goes-a-long-way liqueur whose complete formula is known only to a pair of monks in France’s Chartreuse Mountains — and juice in a cocktail shaker. Mix the agave nectar with an equal amount of water to make 1/2 ounce of agave syrup. Add the egg white and, as usual with egg cocktails, shake vigorously before you have added ice.

Then, add ice, shake again very vigorously and pour over fresh ice into a fairly good size rocks glass. Add a lemon wheel and mint sprigs, which I think is actually an important part of the flavor here, particularly the mint. Toast the people of Ireland (who gave us James Joyce), the people of Kentucky (who gave us two of my favorite character of recent pop culture, Raylan Givens and Abraham Lincoln), and why not throw in those Carthusian monks and Julie Reiner while you’re at. I know I’m grateful to all of them.

This really is an especially well-balanced whiskey sour variation. Aside from the good booze, the agave, and the all important (though viscous and therefore tricky to measure out), egg white, the secret ingredient in here is the grapefruit. In fact, I have to credit this drink for dispelling my childish dislike of the bittersweet citrus fruit with legendarily healthy properties. I hated the stuff as a child and always remembered it as just bitter and ultra tart. I’m embarrassed to say that I haven’t tried eating the stuff in years. Apart from this drink, I find I now am increasingly tolerant of the stuff. It’s actually about as sweet as it is bitter, sorta kinda like the citrus equivalent of Campari or Aperol.

It’s healthy too. In fact, now I understand that grapefruit might actually help fight type 2 diabetes, an illness genetics — and my outsize enjoyment of food and drink — suggest I might fall prey to. Is it possible this is a drink that could save my life? Well, I’m definitely going to use that excuse the next time I make it.
